Show Us your grilling recipes!

So...the problem of going to bed at 9 means you are wide awake at 2! No problem, just get an early start on SUYL! :)
Josh made this steak last weekend for our fajitas and it was probably one of the top five steaks I've ever had. It was so flavorful and juicy. Sooo good! It has a smoky southwestern kick, but it's not spicy at all. You could also use flank steak, but I think the skirt steak has more marbling (more fat) and that's another reason I prefer it, more flavor!

First, you make the marinade!
1/4 cup of vegetable oil (I used EVOO because I was out)
juice of one lime
*1 bunch of cilantro
*1 serrano or jalapeno pepper
*I put these two in the food processor together
1 1/2 Tbsp. of ancho chile powder

Whisk all together and then pour over your skirt steak and make sure all of the steak is covered.


We only marinate the steak for an hour since the lime juice in the marinade can start to "cook" the steak because of the acidity.
Okay so preheat your grill to medium high heat and toss the steaks on for three minutes per side for medium rare. The good thing about these steaks though is if you want more of a medium well you can just heat your grill higher on one side.

We made fajitas out of these and they were SOOOO good.

Bite Night Part Deux and Random Thursday Happenings

Hi everyone! We had another successful supper club last night! We ate WAY to much because the food was WAY good and our guests didn't leave till 11:30, because of all the fun! Yay!
The theme was Italian and I had the main course. I made Pioneer Woman's lasagna and my own version of lasagna that was basically chicken lasagna with layers of spinach artichoke dip. Honestly, I was a little worried because I was just throwing things in a bowl and praying they turned out good. Haha! But it was SO good. I think it helped there was probably two pounds of cheese in each of the lasagnas.

We also had yummy bruschetta, "homemade" bread, salad and a very delicious and unique layer cake made by Treece! It really was yummy.







After dinner, Josh made cappuccinos! Us girls talked and the boys played this game called dorkball. Which basically consisted of them running full speed around the pool table while rolling one pool ball into another. It was hilarious to watch. I'm really sad I didn't get any pictures!

Addi didn't sleep so well last night. She woke up around 2 and didn't go back to sleep till 3, and Josh said she woke up every hour, but I guess I didn't hear her. So I was dragging today! I had two lattes and they did nothing! But, Cassie came and hung out with us today! We hadn't seen her in awhile so it was so much fun to catch up. We ate lunch with Landon at McAlister's. Josh couldn't get away from work. :( After lunch, we came home and put Addi down for a nap and just sat and talked. It was so nice! Sister woke up in a cranky mood so we tried our best to keep her entertained for the rest of the afternoon!


Another random thing, when Carson lived with us, anytime anyone came in our house he would yell, "DIXIE ORANGE ALERT!!!!!!!!!!!!" and she learned that orange alert means someone is here, attack! Well, Dixie's version of attacking is licking your toes, so she's not at all scary. But, today I calmly said, "Dixie, orange alert." And she bolted for the front door and sat there just waiting for someone! It was hilarious!

For dinner we had homemade pizza. I've gotten really good at throwing things together last minute and them turning out edible. All these things were in our fridge or pantry. It was tomatoes that Josh's grandma had canned, and I just added Italian seasonings and red pepper flakes, Canadian bacon, pepperoni and Monterey jack cheese. We loved it. Addi loved the canadian bacon too!


Josh and I are planning on going to bed VERY early tonight! Ha! I hope y'all had a great day!

Tuesday Fun!

We had a fun and productive day today! I decided it was time for us to stop sleeping half of the day and actually start getting things done! Ha! This morning Addi was so talkative and full of energy! I think she's starting to feel a lot better. I can't believe how much hair she's getting!


We got to eat lunch with Landon today too! He was down here for a class and had a lunch break, so we were very happy to see him. Today was his birthday also!

After lunch me and Addi ran to Hobby Lobby. I got a few things to start on her birthday decorations, and some fall fabric, and.....FALL DECORATIONS ARE HERE!!! Ahh! I love decorating for fall!

Addi helped me pick out a little something. It was on sale and I'm always adding to our decorations we already have.


I can't wait to show some of Addi's fall clothes I've been working on! They are sooo cute!!!
Addi took a very short nap this afternoon so while she napped, I cleaned a little and made some calls for RMH. When she got up, she was still tired, but I wanted to make sure she went to bed tonight, so we played ALOT this afternoon!

Tomorrow, we have a play date, lunch with Daddy and Landon, cleaning and our supper club! I made two kinds of lasagna that might kill a person just by the amount of cheese in them! Hope y'all had a great day!!

Weekend Recap!

Hi everyone! I hope you all had a great weekend! Addi and I are feeling much better, we had a very lazy and relaxing weekend so I think that helped alot!
On Friday, me and Addi literally did nothing ALL day. It was the best. She was still on Benadryl so she was very sleepy, as was I. So there were lots of mommy and baby naps on Friday. :)

Saturday for lunch we went to Milford Track. It was delicious as always!

Saturday night, we had a fiesta!!! Josh grilled the most amazing fajitas. I'm serious, the skirt steak was probably top five best steaks I've ever had.







On Sunday, me and Addi got up and made sausage balls for breakfast. She LOVED them! I was so surprised, but she ate a whole one by herself. Ha!
We just played till her morning nap and what was supposed to be us laying down with her for 10 minutes then getting ready for church turned into a two hour nap. Whoops. We just laid around the rest of the day and then Addi took a three hour nap later that afternoon. All in all, it was a great weekend and just what I needed!

Call me crazy!

So since I can't make up my mind on one birthday outfit, Addi is going to have a WEEK of birthday outfits. Don't worry, she will be able to re-wear most of them since her theme is pink and green. And since we have so many talented relatives and friends, most of them will be made by them! Yay! So, here are the finals. Now I just have to decide between them. And yes, I am crazy. :)



Quick trip to Tulsa!

Well our trip to Tulsa didn't go exactly as planned. Let me just start from the beginning. On our way up there, Addi did great! She slept for the first two hours, played for an hour, but the last hour she started to get kinda restless. Luckily, I had my trusty magazine to hold her off. We got to Janelle's around 1 and apparently, they had a little visit from the fire department just right before we got there! Miss Hadley had locked herself in her room and the fire department had to come and unlock the door! She was perfectly fine, just a little scary!
We tried putting the girl's down for a nap, but neither of them were having it so we just let them play.

We went to an amazing place for dinner called Tally's. It looks like a diner that has been featured on Diners, Drive-Ins and Dives. Everything there is homemade, cheap and good. I got the fried chicken dinner and it was four HUGE pieces of boneless chicken that was hand battered, mashed potatoes, fried okra, a salad and I think it was supposed to come with a roll, but I didn't get it, all for $7.50! And it was sooo good. Janelle got a really good burger that had melted cheese, BBQ sauce and pickles. Odd combo, but very delish. Hadley enjoyed her dinner too!

After we got back from dinner we put the girls in the bath. This was Addi's first time in the big bath and first time with a bath buddy!


After the bath, we got both girls to bed without any problems. They were worn out and hadn't had an afternoon nap. Well, Addi slept for about 2 hours before the first wake up happened. I put her back down and she immediately woke back up. Well, it was getting kinda late anyways, so I just put her in bed with me and attempted to go to sleep. Long story short, Addi didn't go to sleep until 1 and woke up at 5:30. And it wasn't exactly a solid stretch of sleep, she would flail and yell about every hour. I woke up with the worst sinus congestion EVER! I literally thought my head was going to explode. I could tell Addi didn't feel good either and her nose was really runny too. So, we decided to go ahead and go home. :( I was so sad! Addi slept most of the drive home which was good. I made an appointment for her to see her doctor just to check things out. Skipper came down and went with me to the appointment. Her doctor said it was just a cold and to give her some Benadryl and Pedialyte. So...we went home and I took some medicine and Addi took her medicine and Skipper watched Addi while I got some much needed rest. Poor Addi was conked out too. Josh said at one point he was laying down with her and she sat up and started crawling and just passed out mid-crawl! She slept through the night and I woke up feeling much better! I'm still not 100%, but I'm getting there. Thank you so much Skip-ma for coming and helping out!!! Also, thank you Josh for taking care of both of us!!!
Today has just been a very VERY lazy day! We have been sleeping alot and just taking it easy.
Thank you Janelle and Hadley for letting us come visit you! Sorry we had to leave so soon! Maybe next time we can stay longer! :)
