Clean Eating

I am SOOOO excited to say that thanks to my amazing in laws, I am going to Mexico at the end of this month!!! I've been dying to go to the beach and Jeanette is letting me tag along on a little getaway with them. These are some pictures from the resort. Absolute paradise. I can't wait!!! 

Now, while I am just giddy with the anticipation of being on the beach, I have a little trepidation as far as being "beach ready." I don't hate how I look in a swimsuit, but there is definite room for improvement. :) I am starting the Clean Eating Diet tomorrow. I'm not a big fan of diets, I don't like being restricted and I really don't like being hungry. :) 

I picked the Clean Eating Diet, because you can still have good food. This is just a sampling of what I will be eating next week. I'm going to also share my meal plan at the end of the post if you are interested in joining me! 
So for the diet, you are supposed to eat every 3 hours. Which will be challenging at first, but something to get used to. Also, no white foods, so white rice and pasta are out. No processed foods. No diet drinks. Going to be honest, this will be hard, but I know I will feel better after I get through the first 3 days. Basically, you just try to eat foods that have a lot of natural ingredients. So tons of fruit, lots of lean protein, good carbs, such as whole wheat pasta and brown rice, and lots of veggies. Seems easy enough, right? :)

I found this blog, called The Gracious Pantry, and it's been my go to for a lot of the recipes. Also, Pinterest has been a great source too. That's where I found the recipes for the no-bake energy bites and the caprese grilled chicken.  

So onto the meal plan!

Breakfasts for this week:
Red Pepper Egg Scramble
Pumpkin Pie Oatmeal (I know it's July, but it looks amazing!!!)
Banana Wrap
Green Smoothie

Lunches include:
Chicken Taco Salad
Leftover Fried Rice
Berry Almond Chicken Salad
Pecan Pear Salad

Dinners:
Chicken Fried Rice (loaded with tons of veggies and brown rice)
Clean Eating Spaghetti
Rosemary BBQ pork chops with sweet potatoes
BBQ chicken salad-this will be revised a little to eliminate some of the processed ingredients
Grilled Caprese Chicken

In Between Meals/Snacks:
Greek yogurt and berries
Energy Bites
Smoothies
Caramel Popcorn
Banana Wraps
Strips of grilled chicken
Fruit

Sorry, that was a lot of info. Haha!!! But, I want to keep myself accountable and stick to this so I can feel beach ready in a few weeks!!!

  2. I tried a green smoothie a week or two back, but it had spinach AND kale AND turnip greens in it...two cups of each...and there just aren't words to describe how nasty that stuff was! But your smoothie sounds much better. :) Good luck with your diet (not that you need to lose anything!!), and I'm sooo excited for you and Mexico!!
